I have SOOO many items in my Saved folders so decided to pop a handful into this week's menu.

Tonight's dinner was this delightful bowl by theskinnyishdish . I made enough meatballs for two meals so put half in the freezer for another night. While eating dinner we watched YouTube videos about Paros, reminiscing about our amazing holiday to this Greek island 22 years ago 🥰.

I made my own Greek seasoning from a recipe I found online (because Greek seasoning can't be found in my neighbourhood 🥴). I used carrot, buttercup, zucchini, capsicum, and red onion for the roast vege, and added grated carrot to the meatballs to make them go further. I used lean beef mince (no turkey) and cooked them in the Airfryer.

Our kitchen renovation has officially begun. Without a full kitchen, I’ll be making it work with a few, small kitchen appliances (air fryer, microwave, crockpot, electric griddle, coffeemaker, and fridge) down in our basement.

But I’m focused on my goals and am here to prove we can make this work in the most chaotic of circumstances. 🤪

On tonight’s menu... Greek Burger Bowls!

I browned my meat with the sauté feature on the instant pot and piled it up with some of our fave pairings!

Hamburger meat with greek seasoning • black olives • cucumbers • grape tomatoes • red onions • tzatziki• all on a bed of arugula and served on the finest of Dixie China 🤣🤣

It’s going to be a long six weeks, but we will make this work!

    I have enjoyed preparing greek meals from a recipe for sometime.  I particularly love the various ways to grill fish.  I have not used a specific seasoning but a combination of dried seasoning that the recipe suggested.  Would you suggest buying the various ingredients you listed and combining them or is there a specific brand of “Greek Seasoning” that does the combining?  I have all the spices you have listed so I will continue to experiment to see the flavor combinations that I like best.
