What is Cinnamon Spice – Where Can I Find The Best Quality

Cinnamon is an age-old spice that is obtained from the bark of few types of trees of the Cinnamomum genus which are evergreen trees with oval shaped leaves & shrubs.

Mythical Importance – In olden times, cinnamon was valued as much for its sweet, sharp, and arousing aroma as it was for its taste. The antiquated Egyptians utilized cinnamon alongside myrrh to treat the dead, and the Romans consumed it on burial service fires.

What is a Cinnamon Stick?

When a cinnamon tree is around two years of age, cultivators cut back the plant to the size of a stump and spread it with soil, this process makes it grow like a hedge, with new shoots rising out of the sides by the following year. It’s these shoots that are utilized to make cinnamon. The inner bark, obtained by cutting the stems of cinnamon trees, is first dried after the outer woody parts are removed. When dried, it curls up into rolls. These are known as cinnamon sticks. Typically there are 2 types of cinnamon:

Ceylon Cinnamon or Cinnamomum Veryom – Also known as true cinnamon is the expensive one and mostly still produced in its native land of Sri Lanka, an island situated at the tip of India.

Cassia Cinnamon or Cinnamomum Aromaticum – Also known as Chinese cinnamon is mainly cultivated in its native land, China along with southeast Asia.

Types Of Cinnamon

You can get cinnamon as a stick or in a powdered form. Sticks tend to be spicier with a robust woody flavor and holds more of its flavor. The same effect can be obtained from cinnamon powder if its is freshly grounded[2]. The powdered version may start to lose its potency if kept for longer periods of time.

Three kinds of cinnamon that are usually utilized for commercial purposes are as follows:

Ceylon Cinnamon – May also be known as Mexican cinnamon, since Mexico is the most excellent merchant of Ceylon cinnamon from Sri Lanka. Made of thin, delicate layers folded into a plume-like shape. Has a gentle, inconspicuous sweet taste with a fragrant smell. Light earthy colored in shading. Brittle and effectively breaks into small pieces. Contains just 0.04% Coumarin

Korintje Cinnamon – May also be known as Indonesian Cassia cinnamon, found in Indonesia. Records for 70% of North American imports. Contains around 4% Coumarin levels.

Saigon Cinnamon – May also be known as Vietnamese Cassia cinnamon. Extra spicy but sweeter in taste. Contains a significant level of Coumarin at around 8% [6].

Coumarin is a fragrant yet poisonous substance generally found in elevated levels in some cinnamon assortments, especially Cassia cinnamon. If taken in an enormous sum, coumarin may cause liver harm and other health effects.

Where Does Cinnamon Grow?

Sri Lanka (known as Ceylon in the 1500’s) is probably the largest supplier of Ceylon cinnamon where it grows naturally along with India (also grows naturally) Seychelles, Madagascar as its smaller counterparts in terms of production.

The four countries that may account for 99% of the world supply of Cinnamon would be as follows:

  • Sri Lanka
  • Indonesia
  • China
  • Vietnam

Cinnamon Taste and Flavor

Cinnamon has an aromatic sweet and savory flavor slightly varying depending on the kind of cinnamon. In general, it has a robust, warming and strong taste that is hot (not spicy like chilies), bitter and slightly sweet. Although, its not meant to be sweet but has some sweet nodes to it due to limited tartness.

Cinnamon Stick vs Ground Cinnamon

In term of choosing which form of Cinnamon to use, it would vary from person to person and would depend on the dish or recipe you are using it for. Cinnamon stick will most definitely deliver a more profound flavor, we believe. When used in baking recipes like cakes and bread, most people would use ground cinnamon which is obviously simpler and far less fiery. We prefer to use stick or freshly ground powder for our recipes so that we can preserve the flavors and potency. Perhaps even store them for extended periods.

How long does Cinnamon last

As most of us would like to think that spices and herbs are immortal and can never expire and so we never care to check how old are our spices. In our opinion, Cinnamon spice more than 2-3 years old would have less effect than compared to the fresh ones. Either way, cinnamon spice should be stored in cool and dark area for possibly a longer shelf life. Cinnamon sticks will hold its nutritional value longer than compared with ground Cinnamon. Health benefits of ground cinnamon should be similar to Cinnamon sticks assuming its harvest and consumed at its most freshest stage, however, ground Cinnamon, in our opinion, could start to slightly lose its value over time than compared to cinnamon sticks depending on how its stored and consumed. We prefer to store Cinnamon in its purest form and ground it when we need it in powder form to get optimal results.

Impacting Glucose Levels – Research may suggest that cassia cinnamon might lessen glucose levels, as per a 2015 audit. The audit additionally noticed that after 60 individuals, with type 2 diabetes, who consumed around 6 grams (g) of cinnamon every day between 40 days and four months, had lower serum glucose, triglycerides, low-thickness lipoprotein cholesterol, and total cholesterol.

Other Health Benefits of Cinnamon – A few people may have used cinnamon enhancements to treat stomach related problems, diabetes, loss of craving, and other different conditions. It may also be used in conventional medication for potentially treating bronchitis

Improving Contagious Contamination – Cinnamon oil may help treat a few sorts of parasitic contamination. A 2016 research center investigation found that cinnamon oil was successful against Candida fungal infection. This maybe possible due to Cinnamon’s antimicrobial properties.

Antioxidant – Cinnamon has shown promising results as an antioxidant, antibiotic & anti-inflammatory but there aren’t enough studies to prove it can help as quoted on webmd.

Cinnamon has been a known source of health benefits for thousands of years, dating back to the Ancient Egyptians. From power packed anti-oxidants to the ability to help improve sensitivity to insulin - it’s a great ingredient to add to your daily routine🫶🏼

Personal Use: I put a dash of cinnamon into my morning health concoction (which also includes spirulina, turmeric and ginger).

Caution: There are two types of cinnamon: Ceylon and Cassia. Ceylon is considered "true" cinnamon and has significantly more health benefits than Cassia (most common variety). If you do end up using Cassia cinnamon, be sure to avoid large quantities as Cassia contains a significant amount of coumarin, which is believed to be harmful in large doses.

Absolutely a loved spice in Indian cooking. We put cinnamon into literally every dish. Don’t ask me why? It’s strong and very fragrant. And it does make food really tasty. Oh, its the smell. Wow!
