Cinnamon is an age-old spice that is obtained from the bark of few types of trees of the Cinnamomum genus which are evergreen trees with oval shaped leaves & shrubs.

The same effect can be obtained from cinnamon powder if its is freshly grounded[2]. The powdered version may start to lose its potency if kept for longer periods of time.

Three kinds of cinnamon that are usually utilized for commercial purposes are as follows:

Ceylon Cinnamon – May also be known as Mexican cinnamon, since Mexico is the most excellent merchant of Ceylon cinnamon from Sri Lanka. Made of thin, delicate layers folded into a plume-like shape. Has a gentle, inconspicuous sweet taste with a fragrant smell. Light earthy colored in shading. Brittle and effectively breaks into small pieces. Contains just 0.04% Coumarin

Korintje Cinnamon – May also be known as Indonesian Cassia cinnamon, found in Indonesia. Records for 70% of North American imports. Contains around 4% Coumarin levels.

Saigon Cinnamon – May also be known as Vietnamese Cassia cinnamon. Extra spicy but sweeter in taste. Contains a significant level of Coumarin at around 8% [6].

Coumarin is a fragrant yet poisonous substance generally found in elevated levels in some cinnamon assortments, especially Cassia cinnamon. If taken in an enormous sum, coumarin may cause liver harm and other health effects.

Where Does Cinnamon Grow?

Sri Lanka (known as Ceylon in the 1500’s) is probably the largest supplier of Ceylon cinnamon where it grows naturally along with India (also grows naturally) Seychelles, Madagascar as its smaller counterparts in terms of production.

Although, its not meant to be sweet but has some sweet nodes to it due to limited tartness.

Cinnamon Stick vs Ground Cinnamon

In term of choosing which form of Cinnamon to use, it would vary from person to person and would depend on the dish or recipe you are using it for. Cinnamon stick will most definitely deliver a more profound flavor, we believe. When used in baking recipes like cakes and bread, most people would use ground cinnamon which is obviously simpler and far less fiery. We prefer to use stick or freshly ground powder for our recipes so that we can preserve the flavors and potency. Perhaps even store them for extended periods.

How long does Cinnamon last

As most of us would like to think that spices and herbs are immortal and can never expire and so we never care to check how old are our spices. In our opinion, Cinnamon spice more than 2-3 years old would have less effect than compared to the fresh ones. Either way, cinnamon spice should be stored in cool and dark area for possibly a longer shelf life. Cinnamon sticks will hold its nutritional value longer than compared with ground Cinnamon. Health benefits of ground cinnamon should be similar to Cinnamon sticks assuming its harvest and consumed at its most freshest stage, however, ground Cinnamon, in our opinion, could start to slightly lose its value over time than compared to cinnamon sticks depending on how its stored and consumed. We prefer to store Cinnamon in its purest form and ground it when we need it in powder form to get optimal results.

    I see that you have written about yet another favorite spice of mine called cinnamon. Its also called “daalchini” in Hindi, which is an Indian language. Absolutely a loved spice in Indian cooking. We put cinnamon into literally every dish. Don’t ask me why? It’s strong and very fragrant. And it does make food really tasty. Oh, its the smell. Wow!
